What is Xylitol?
Xylitol is a naturally occurring sugar alcohol (polyol) commonly used as a low-calorie sweetener in foods, supplements and pharmaceutical formulations. Sugar alcohols are a class of carbohydrates whose chemical structure resembles both sugars and alcohol groups, though they do not contain ethanol (the alcohol found in alcoholic beverages).
Xylitol provides a sweetness level like sucrose while delivering fewer calories and a much lower glycemic response, making it a useful ingredient in sugar-free and reduced-sugar products.
Importantly, xylitol is not a synthetic compound. It naturally occurs in many plant foods and is also produced in small amounts during normal human metabolism. It can be found in fruits and vegetables such as berries, plums, corn, oats and mushrooms. Reported concentrations include approximately:
- Carrots (~86.5 mg/100 g)
- Yellow plums (~935 mg/100 g)
- Cauliflower (~300 mg/100 g)
- Lettuce (~96.5 mg/100 g)
- Strawberries (~362 mg/100 g)
For commercial use, xylitol is typically produced from plant-derived fiber sources, where hemicellulose is converted into xylose and then hydrogenated to produce xylitol. Common raw materials include corn cobs, birch wood and other plant-based agricultural materials.
Because of its mild sweetness, pleasant taste and stability, xylitol is widely used in:
- Nutritional supplements and chewable tablets
- Sugar-free foods and beverages
- Lozenges and throat preparations
- Functional foods and specialty nutrition products
Xylitol may also appear on ingredient labels under related names such as “birch sugar,” “wood sugar,” or “xylitol (E967)”, the European food additive code for this compound.
